For many years I cooked at various restaurants, schools and catering gigs. My career path led through the stages of professional development ending as food service director for the Hyde School in Woodstock. I had planned to make hot sauce when I retired. A change in employment status (nice euphemism) changed the situation.
The time was ripe to make this long considered move and taking chances is something that gets harder as the years go by. There is a ropes challenge course offered at the Hyde School that got me 24 feet off the ground, blindfolded, trusting the rope that held me and the students that belayed me.
This showed me that I could step into the unknown both figuratively and literally. I recommend it to everyone who may be getting too set in their ways. Sometimes you just know in your bones that a thing is meant to be: that was one of those times.
